1 large sweet potato, scrubbed clean
1 teaspoon olive oil
1/2 teaspoon kosher or sea salt
Cut off ends of sweet potato and slice thin. Put in a bowl and add oil and salt. Toss to coat.
Cut out a piece of parchment paper in a circle to fit the tray on your microwave tray. Place sweet potatoes in a single layer on tray. Microwave on high power for 2 1/2 to 4 minutes or until crispy but not browned. Watch carefully and check at 2 minutes.
You can alas a result seaas a resultn with a pinch of cayenne, chili powder, or cumin. Chopped rosemary and sea salt is alas a result a great seaas a resultning combination! I usually double or triple the recipe!
